3 (Two-Ingredient) Swaps for Ice Cream

If I could only eat one dessert for the rest of my life, it would be ice cream.

I could EASILY put down bowls of McConnell’s Salted Caramel Chip every single day (I mean, who couldn’t?), but the nutrition coach in me knows that wouldn’t exactly be the healthiest thing to consume on a daily basis. Sigh.

Thankfully, when I’m craving ice cream or a sweet treat after dinner, I’ve come up with a few quazi-ice-cream-like alternatives.

They’re much healthier and satisfying enough to get me through those ice-creamless nights. (Plus, the more you eat clean and cut down on sugar, the more these really do taste like dessert!)

And each of these alternatives has just two ingredients, mainly because I’m lazy and don’t like making actual recipes very often… because who has time for that?

You could certainly combine parts of these or get creative and add additional ingredients like coconut flakes or chopped pecans. The possibilities are endless!

Swap #1:   Frozen Cherries + Coconut Butter

  • Melt the coconut butter first (or in the summer it probably already will be melted). Drizzle it over the cherries and as soon as it gets cold it will harden. This gives it an extra tasty crunch 😉
  • You could also substitute any frozen berries. I like to let them thaw for just a few minutes so they’re a little softer.
  • This is the kind of coconut butter I use.  (Did you know just a tablespoon has 2 g of fiber?!)

Swap #2:   Frozen Banana Slices + Dark Chocolate

  • This is a great way to use overripe bananas that you no longer want to eat.
  • I remove the peel and freeze ’em whole. Then I slice one up just before I’m ready to eat it.
  • For the chocolate, I simply break up a dark chocolate bar and sprinkle on top. (Look for 70%+ cacao.)

Swap #3:   Raspberries + Whipped Cream

  • You could use any type of fresh or frozen berries for this one. (Strawberries are my second fave.)
  • Not only are raspberries packed full of antioxidants, but just 1 cup has only 5 g of sugar and 8 g of fiber!
  • If you can, look for a healthier whipped cream option like these or you could make your own like this one.
